Refrigeration for butcher shops

A butcher's shop runs on its counter. We supply serve-over counters, back of house cabinets, multideck chillers and freezers, cold rooms and dry ageing cabinets from nine European manufacturers, and we have been doing it for more than twenty years.

What we usually supply

The kit a butcher's shop runs on

Serve-over counters and back of house cabinets are the two most shops run, and whichever is tired first is usually where the money is best spent.

Mondel Meat&Deli refrigerated counter

Serve-over counters

A glass-fronted counter with a cold well, low enough that customers see the meat and you can serve over it. We size it to your busiest day, not your quietest.

ISA multideck chillers and freezers

Multidecks, chilled and frozen

For the lines that never fit the counter, and for packs out front. Doors cost a little more up front and cut the running bill for as long as the cabinet lasts.

Criocabin Genesis System cold room

Cold rooms

Storage and prep space behind the shop, sized to how much you hang, break down and hold between deliveries.

Refurbish rather than replace

If the case is sound and the refrigeration is the tired part, new front panels, shelves, doors and lighting, plus a deep clean, brings it back for a fraction of new.

Dry ageing cabinets

A range of dry ageing cabinets with glass doors, so customers can watch what is maturing and you can hold the conditions properly. Tell us the cuts you want to age and the space you have, and we will match a unit to it.

Leda commercial freezer

Freezers

Frozen storage for the lines you hold over, from upright cabinets to chest freezers, sized for a back room rather than a supermarket aisle.

Butcher questions

What butchers ask us

The four questions we hear most from butchers, answered straight.

Almost always overstocking. A display counter needs cold air to move around the product, and when trays are stacked above the load line the air cannot reach the top of the case, so the temperature drifts up exactly when you are busiest. Load it to the line on your busiest day and see what it does.

If the case is structurally sound and the refrigeration is the tired part, a refurbishment gets you new front panels, shelves, doors and lighting, plus a deep clean, for a fraction of the cost of new. Replace it when the cabinet is more than ten to fifteen years old and running up bills, or when it will not hold temperature on a summer Saturday.

Often, but not always. Manufacturers discontinue lines, so an exact match is not guaranteed, though we can usually get close and blend the join so it does not read as the odd one out. Send a photo and the dimensions and we will tell you honestly what is achievable.

Yes. Deliveries are planned around your quiet days, or over a closed day, so stock is not sitting in boxes while the shop is trading.
